White Pasta

White Pasta White pasta, like many things in Italy is very regional. The local ingredients being used as well as the traditional methods can differentiate the texture and flavor of the pasta. All of Olivelle’s artisan pastas are bronze dye extruded and allowed to dry for 3 to 4 days compared to industrial pastas that use Teflon-coated steel dyes and dry the pasta under heat. The artisan difference is what makes our pasta taste like it was homemade, for you, by a little Italian grandmother slaving away in the kitchen.
