For the Fish:
1 lb. Fresh Mahi-Mahi
½ cup Parmesan or Asiago cheese, grated
2 tsp. Parmesan Dipper
½ cup Bread Crumbs (see directions below)
2 cloves fresh Garlic, chopped
½ cup Tahitian Lime Extra Virgin Olive Oil
1 tsp Pepato Sea Salt
For the Breadcrumbs:
1 Baguette
4 Tbsp Caramelized Garlic Olive Oil
2 Tbsp Parmesan Dipper
1. Preheat the oven: Preheat the oven to 400°F. Cover a baking sheet with aluminum foil to prep for breadcrumbs.
2. Prepare the Breadcrumbs: Cut the baguette into bite size cubes. Place bread on the prepared baking sheet and drizzle with Caramelized Garlic Olive Oil and Parmesan Dipper. Toss to coat all of the bread, adding more oil and herbs if necessary. Place sheet in the oven and bake for 8-10 minutes or until golden brown. Place the cooled bread pieces into a Ziploc bag and crush with a rolling pin until pieces become fine.
3. Create the crust: In a medium bowl combine the grated cheese, Parmesan Dipper, bread crumbs, fresh garlic, and Pepato Sea Salt.
4. Coat the fish: Brush the Mahi-Mahi with Tahitian Lime Olive Oil. Dredge the fish in the herb crust mixture making sure to coat it completely.
5. Cook the fish: Heat a large sauté skillet on the stove to a medium high temperature. Once the fish is ready and the pan is hot add a drizzle of Tahitian Lime Olive Oil to the pan. Place the fish in the hot pan, searing for 3 to 5 minutes per side.
