Pizza Sauce

2 Tbsp Caramelized Garlic Olive Oil
4 cups Ripe Tomatoes
½ White Onion
6 cloves Garlic
4 Tbsp Miscuglio Italian Dried Herb Mix
4 Tbsp “Series 7″ Balsamic Vinegar
3 Tbsp Granulated Sugar
Salt & Pepper, to taste

1. Cook down the tomatoes: In a large sauce pot, over medium heat add the olive oil, tomatoes, onions, and garlic. Season with the Miscuglio, vinegar, and sugar. Let cook until the tomatoes have cooked down, about 45-60 minutes.

2. Blend the tomatoes: Place the cooked down tomato mixture into a blender or food processor and process until smooth.

3. Strain the sauce: Using a fine mesh strainer over a bowl, spoon the blended mixture into the strainer. Use a spoon to “stir” the mixture to help move it through the strainer. Discard the remains from the strainer. A smooth sauce should result.

4. Salt and pepper: Salt & Pepper the pizza sauce and return to the stove to reheat if desired. Use as a delicious pizza sauce, pasta sauce, or dip with a crusty Italian baguette.
