Chicken Taco Bowl With Creamy Jalapeño Dressing

Ingredients
- 1 Tbsp Fiesta Spice Infused Olive Oil
- 1 Chicken Breast, butterflied
- 1 Tbsp Sweet Smoked Chili Rub & Seasoning
- ¼ Cup Jalapeño Lime White Barrel Aged Balsamic
- 1 Egg
- ½ Cup Fiesta Spice Infused Olive Oil
- 1 Handful Fresh Cilantro
- 1 Tbsp Sweet Smoked Chili Rub & Seasoning
- 1 tsp Lime Fresco Infused Sea Salt
- 2 Large Tortillas
- 1 Head Romaine, chopped
- ¼ Jicama, peeled & cubed
- 1 Avocado, cubed
- 4-6 Radishes, sliced thin
- ½ cup Cheddar Cheese
- ½ Can Black Beans
Directions
- Heat a skillet over medium-high heat and add 1 tbsp Fiesta Spice Infused Olive Oil. Season the chicken with 1 tbsp Sweet Smoked Chili Rub & Seasoning and place in the hot skillet. Sear until cooked throughout, about 5-7 minutes per side. Cool and slice. Set aside.
- In a food processor or blender, make the dressing. Add the Jalapeño Lime White Barrel Aged Balsamic, egg, and Fiesta Spice Infused Olive Oil. Process until thick. Add the cilantro, Sweet Smoked Chili Rub & Seasoning, and Lime Fresco Infused Sea Salt. Pulse to combine.
- Arrange the tortillas in a bowl. Fill with lettuce, then top with chopped veggies, cheese, black beans, and chicken. Top with dressing and enjoy!
