This is the kind of salad I want for lunch or dinner any day of the week. Juicy strawberries, crisp cucumber, creamy feta, and crunchy pistachios meet chicken marinated in Sicilian Lemon Infused Olive Oil and Barrel Aged White Thick Sweet Balsamic. A tangy lemon poppy seed dressing ties it all together.

Ingredients

    Chicken

    • 2 Chicken Breasts, cubed into ¾ inch pieces
    • 3 Tbsp Sicilian Lemon Infused Olive Oil
    • 2 Tbsp Barrel Aged White Thick Sweet Balsamic
    • 1 Tbsp Butcher's Spice Blend

    Dressing

    • 1 cup Greek Yogurt
    • ⅓ cup Mayonnaise
    • 1 ½ Tbsp Sugar
    • 2 Tbsp Barrel Aged White Thick Sweet Balsamic
    • 1 Tbsp Sicilian Lemon Infused Olive Oil
    • ½ tsp Butcher's Spice Blend
    • 1 Lemon, zested and juiced
    • 2 Tbsp Poppy Seeds

    Salad

    • 4 cups Mixed Salad Greens
    • ½ Cucumber, halved and sliced
    • 1 cup Strawberries, sliced
    • ½ cup Feta, crumbled
    • ⅓ cup Pistachios, chopped

    Directions

    1. Place the cubed chicken in a bowl. Mix with 3 Tbsp Sicilian Lemon Infused Olive Oil, 2 Tbsp Barrel Aged White Thick Sweet Balsamic, and 1 Tbsp Butcher's Spice Blend. Cover and marinate in the refrigerator for 30 minutes or up to 6 hours.

    2. Whisk together the yogurt, mayonnaise, sugar, 2 Tbsp Barrel Aged White Thick Sweet Balsamic, 1 Tbsp Sicilian Lemon Infused Olive Oil, ½ tsp Butcher's Spice Blend, lemon zest, lemon juice, and poppy seeds in a small bowl or mason jar until well combined. Refrigerate until ready to use.

    3. Heat a sauté pan over medium high heat. Add the marinated chicken and cook until golden and the chicken reaches an internal temperature of 165°F, about 8 minutes.

    4. Layer the mixed greens, cucumber, strawberries, feta, and pistachios on a platter or in bowls. Top with the warm chicken and drizzle with the dressing. Serve immediately.

We cannot get enough of this salad! Amazing flavor and the perfect combination of savory and sweet. I’ve made this twice in the past month and before dinner even ends, my husband asks me when we will have it again!
