Ingredients

  • 1 ½ lb Red Potatoes, large dice
  • 2 Tbsp Garlic & Herb Infused Olive Oil
  • ¼ cup Mayo
  • 2 Tbsp Roasted Garlic White Barrel Aged Balsamic
  • 1 ½ tsp Lemon & Dill Tzatziki Rub & Seasoning
  • 1 tsp Citrus Dill Infused Sea Salt
  • 6 Rashies, diced
  • ¼ cup Scallions, sliced

Directions

  1. In a large stock pot, cover diced potatoes with cold water. Bring to a boil and reduce to a simmer. Cook potatoes until fork tender, about 15-20 minutes once boiling. 
  2. Remove potatoes from the pot and rinse under cold water making sure to drain any excess water.
  3. In a large bowl, combine potatoes, olive oil, mayo, balsamic, rub, and  sea salt.
  4. Top with radishes and scallions. Enjoy!

The flavors are absolutely perfect and the dressing to potato ratio is also perfect.

I might add a little red onion or shallots next time just so there’s more crunch though.
