This pasta is full of flavor! Trofie is a fun, twisty pasta that pairs perfectly with a fresh, herby pesto made with basil and almonds (instead of pine nuts). Every bite is bursting with yummy pesto goodness! You can even save any leftover pesto in the fridge or freezer to use later for sauces, veggies, or marinating meat. A simple, tasty dish that’s easy to love!

Ingredients

½ lb Trofie Pasta

1 Pasta Rocks

2 cups Basil

2 Garlic Cloves

½ cup Caramelized Garlic Infused Olive Oil

¼ cup Almonds
-
½ tsp Rainbow Sea Salt

¼ cup Parmesan

1 Tbsp Barrel Aged Dark Thick Sweet Balsamic
Directions
Bring 4 quarts of water to a boil over high heat. Season with 1 pasta rock according to package directions. Add pasta and cook to package directions. Cover pasta and set aside.
In a small fry pan over medium heat toast almonds until fragrant, about 6-7 minutes. Remove from heat.
In a food processor, blend together basil, garlic, olive oil, almonds, and salt, stopping to scrape the sides of the bowl. Pulse in parmesan cheese until combined.
Toss pasta with pesto and finish with Barrel Aged Dark Balsamic Vinegar.
Recipe Note
If you don't have Pasta Rocks on hand it is still important to season your pasta water! Salting the water is the only time the pasta itself is going to be seasoned so make sure your water is salty like the sea. We recommend adding 1 Tbsp of salt for every 4 quarts of water.
