Ingredients

  • ¼ cup Key Lime Infused Olive Oil
  • ¼ cup Mojito White Barrel Aged Balsamic
  • 2 tsp Mojo Citrus Seasoning Salt
  • 1 Personal Size Watermelon
  • 8 oz Block Feta
  • 8-10 Slices Prosciutto
  • 10 Mint Leaves, chiffonade

Directions

  1. In a jar, combine Key Lime Infused Olive Oil, Mojito White Barrel Aged Balsamic, and Mojo Citrus Seasoning Salt and set aside.
  2. Cut the rind off the watermelon, and cut into uniform ½”-1” cubes.
  3. Cut feta into uniform ½” pieces.
  4. Slice prosciutto into thirds, then roll.
  5. Skewer prosciutto, watermelon, feta, prosciutto, and watermelon.
  6. Sprinkle skewers with mint and drizzle with the dressing. Enjoy!
