Fried Egg, Prosciutto, And Red Pepper Jam Breakfast Sandwich

Ingredients
- 2 Tbsp + 1 tsp Green Chile Infused Olive Oil, divided
- 2 Slices Sourdough Bread
- 1 Egg
- ½ tsp Chili Verde Flake Sea Salt
- 1 Slice Cheddar Cheese
- 2 Tbsp Red Pepper Jam (see recipe here)
- 2 Slices Prosciutto
- ¼ cup Arugula
Directions
- Heat a mid-sized skillet over medium heat. Brush one side of each sourdough slice with 1 Tbsp Green Chile Infused Olive Oil. Place bread oil side face down and toast until slightly golden, 3-4 minutes.
- Keeping the skillet at medium heat, add 1 tsp of Green Chile Infused Olive Oil and cook the egg. Season with Chili Verde Flake Sea Salt. Once whites are almost set, add cheese and cover pan for 1-2 minutes to let cheese melt.
- While the egg is cooking, smear one side of the bread with red pepper jam. Layer with prosciutto and arugula.
- Carefully scoop egg and cheese onto the sandwich and close with the second piece of bread. Serve immediately. Enjoy!
