- 3lb Red Potatoes, rinsed
- ¼ cup Caramelized Garlic Infused Olive Oil
- 2 Tbsp Parmesan Asiago Dipper & Seasoning
- 1 tsp Black Garlic Infused Sea Salt
- 2 Tbsp Prosecco Italian White Wine Vinegar
- Scallions, for garnish
Directions
- Preheat oven to 400F.
- Add potatoes to a large pot of cold, salted water and bring to a boil. Cook until fork tender, about 15 minutes.
- Drain potatoes and transfer to a baking sheet. Evenly distribute the potatoes then use the bottom of a pint glass or ramekin dish to smash each potato down into a thinner, pancake like shape.
- Season the potatoes with Caramelized Garlic Infused Olive Oil, Parmesan Asiago Dipper & Seasoning, and Black Garlic Infused Sea Salt.
- Bake the potatoes until they are crispy, about 45 minutes.
- Finish with a drizzle of Prosecco Italian White Wine Vinegar and a handful of scallions for garnish. Enjoy!
