Ingredients

8 oz Shrimp, peeled and deveined

1 tsp Barrel Aged Dark Thick Sweet Balsamic

1 tsp Key Lime Infused Olive Oil

½ tsp Sweet Smoked Chili Rub & Seasoning

Mojo Citrus Seasoning Salt, to taste

1 cup Brown Rice, cooked
-
1 Red Bell Pepper, diced
-
¼ small Red Cabbage, decored and chopped
-
1 small Avocado, sliced
-
¼ cup Cilantro, chopped

Lime Wedges, for serving
Zesty Dressing

1 cup lightly packed Basil
-
1 cup Greek Yogurt
-
1 Tbsp Barrel Aged Dark Thick Sweet Balsamic
-
Mojo Citrus Seasoning Salt, to taste

Juice and Zest of small lime
Directions
In a bowl combine shrimp, 1 tsp Barrel Aged Dark Thick Sweet Balsamic, 1 tsp Key Lime Infused Olive Oil, ½ tsp Sweet Smoked Chili Rub & Seasoning, and Mojo Citrus Seasoning Salt to taste. Let sit for 10 minutes.
While the shrimp marinates, make the Zesty Dressing. Combine basil, Greek yogurt, Barrel Aged Dark Thick Sweet Balsamic, Mojo Citrus Seasoning Salt, and the juice and zest of one lime in a bowl. Blend with an immersion blender or food processor until smooth. Set Aside.
In a skillet over medium heat, add 1 tsp Key Lime Infused Olive Oil. Add shrimp and cook until opaque, about 2-3 minutes per side. Remove from heat to avoid over cooking.
To serve, divide 1 cup of cooked brown rice evenly among serving bowls. Layer the diced red bell pepper, chopped red cabbage, sliced avocado, and chopped cilantro over the rice. Place cooked shrimp on top.
Top each bowl with a generous drizzle of the zesty dressing and garnish with a lime wedge.
