Dark Balsamic Vinegar

I love it. I use it on salads, roasted vegetables and in many other recipes. I give it as gifts for all occasions and always put a bottle in my niece’s stocking!

The Best Balsamic

I first purchased and repurchased this product while on vacation a few years ago. I found it ideal for many of my recipes, in particular deviled eggs and 3 bean salad. How disappointed I was when that store stopped carrying it. But how delighted I was to fund that I could purchase it on line. I now have plenty for this season's green and yellow beans and a place to order more next year.

Your Top Questions, Answered

The difference is in the quality, the ingredients, and the aging process.

Most grocery store balsamic vinegars are made with low-quality ingredients and often use artificial flavorings and additives to achieve a sweet taste. These vinegars are usually watered down, and many have a much quicker, cheaper production process meaning they don’t have the complex flavors or depth of a true balsamic.

At Olivelle, we take our balsamic seriously. Our balsamic vinegars are made from fresh, crushed grapes and aged in wooden barrels for months or years, creating a deep, rich flavor that comes from natural fermentation. We don’t add any artificial flavors, colors, or preservatives. Just pure, high-quality balsamic.

The result? Rich, sweet, tangy, and complex balsamic with depth that you won’t find in your average store-bought bottle. Once you taste the difference, you won’t want to go back!

Pro tip: Taste test our balsamic next to a store brand and see for yourself. It’s like comparing a homemade pie to a store-bought one. You’ll always notice the difference!

We understand how ingredient labeling can be confusing, especially with the unique process behind true barrel-aged balsamic vinegar.

Here’s what you need to know: Authentic balsamic is made using just two ingredients; cooked grape must and wine vinegar. The grape must (fresh-pressed grape juice) is slowly cooked down until it's thick and sweet. Wine vinegar is then added to kick off natural fermentation and balance the flavor with just the right touch of acidity.

So while it’s called “balsamic,” seeing wine vinegar on the label is not only normal, it’s essential for creating that rich, complex flavor balsamic fans crave!

No, our balsamic vinegars are not certified organic, but they are still incredibly high quality!

Our balsamic vinegars come straight from the heart of Modena, Italy. This region is famous for making real, traditional balsamic using time-honored methods passed down through generations. The small, family-run producers we partner with use natural and sustainable practices, even if they don’t carry the organic label. That’s because getting certified organic can be very expensive and complicated, especially for small farms.

At Olivelle, we care more about what’s inside the bottle than a label on the outside. Every balsamic is carefully aged, full of bold, rich flavor, and crafted with love and tradition. You’ll taste the difference in every drop!

Traditional balsamic vinegar starts with freshly crushed grapes. The juice (called must) is then simmered and aged in wooden barrels for years. Over time, the vinegar ferments, and the flavors deepen as it’s passed through various types of wood like oak, chestnut, and cherry.

Note: Real traditional Barrel Aged Balsamic Vinegar is usually thick, sweet, and expensive because of the 80% grape must and long aging process! Our Balsamic Vinegars of Modena still follow traditional methods, but with a shorter aging process and about 55% grape must. This creates a lighter, more tangy vinegar while still delivering bold, delicious flavor.

At Olivelle, we source our balsamic vinegars from Modena, Italy, the heart of traditional balsamic production. This region has been making balsamic vinegar for centuries, with a rich history of craftsmanship and dedication to quality.

Our balsamics are carefully made from fresh grape must, then aged in wooden barrels for months or even years to develop their complex, deep flavors. We work with small, family-owned producers who take pride in their craft and follow traditional methods to create the highest-quality balsamic vinegar.

So, when you enjoy an Olivelle balsamic, you’re not just tasting a product, you’re experiencing the centuries-old art of balsamic production from one of the most renowned regions in the world.

All of our Balsamic Vinegars and Wine Vinegars are poured fresh for every order so each bottle is packed with fresh flavor! These vinegars are best enjoyed within 12–18 months of purchase. We suggest storing in a cool, dark place with the cap tightly sealed.
